Vegan Eggless Russian Pancake

It is always a good when we are choosing to be a vegan to boost up our healthy lifestyle. There are obviously so many benefits that we will get by being a vegan like dazzling our skin, keeping our weight, improving our sex life, and of course avoiding some ‘animal’ disadvantages.

Pancake is obviously the most favorite breakfast menu which we have enjoyed for ages. Perhaps we have eaten thousands of pieces of pancakes which we always enjoy to start our day.  It is mainly because pancakes are very easy to make, tastes so yummy, and can be mixed with any additional ingredients that we want.

Traditional pancakes totally don’t suit the vegan lifestyle because they use eggs as the main ingredients. So today, many vegan pancakes are made to make it still enjoyable by the ones who choose to become vegan. Some call it eggless pancakes, non-dairy pancakes, or just simply vegan pancakes.

Here, we have an interesting vegan pancake recipe which is originally created by Olga from fablunch.com. It is a super healthy pancake which is really worth to try by the vegans. The pancake is made in Russian style which is not relly fluffy, but the texture is more like between pancakes and crepes, and the pancakes obviously taste really good.

Being a true vegan means that we have to eat all vegan stuff from breakfast to dinner. All of the foods that we are eating should be animal and dairy free. The ingredients should not contain anything which breaks the rules of being a vegan.

The healthy egg-free and diary-free pancakes which are very tasty for your vegan breakfast menu. The Russian texture of the pancakes makes them more joyful to eat in layers. It is very simple and easy to make!

Ingredients
  • 1/3 cup Millet Flour
  • 1/3 cup Oat Flour
  • 1/4 cup Arrowroot Powder
  • 2 tbsps Coconut Sugar
  • 1 1/2 cup Almond Milk
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 tsp Grapeseed Oil (for greasing)
  • Banana and Maple Syrup (for the topping)
Instructions
  1. Mix all the ingredients by using a blender or mixer for about 30 seconds in high-speed mode. 

  2. Let the pancakes batter set for about 6 minutes.

  3. Heat the pan, and add the grapeseed oil. 

  4. Pour 1/4 cup of the pancakes batter into the pan, cook them for about 2-3 minutes then flip the pancakes when the bubbles are coming up.

  5. Layer the pancakes, add the banana slices and maple syrup on top of it.

See? The recipe is totally healthy! It is also very easy to make, and you can serve them as snack or breakfast menu. You can of course also add any fruits and syrups you desire!
