The healthy blueberry pancakes which don't use any eggs or dairy ingredients. They are so delicious and perfect to serve for breakfast or snacks. The recipe is very simple and easy to make for everyone.

Ingredients
  • 250 ml Almond Milk
  • 1/2 cup Whole-wheat Flour
  • 1 tsp Apple Cider Vinegar
  • 1 tbsp Flax Seeds
  • 1 tbsp Coconut Oil
  • 1 tsp White Sugar
  • 1 1/2 tbsps Cold Water
  • 1/4 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 80 grams Blueberries
  • 1 tbsp Coconut Oil (for frying)
  • Dairy Free Yogurt
  • Maple Syrup
Instructions
  1. Prepare a large mixing bowl.

    Mix the flax seeds and cold water. Let the flax seeds absorb the water for about 5 minutes.

  2. Add the almond milk, coconut oil, and apple cider vinegar to the flax seeds mixture. Mix them well. 

  3. In a separated mixing bowl, mix the flour, sugar, baking soda, baking powder, and salt.

  4. Now add the mixture of milk to the flour mixture, whisk them well. Then add the blueberries.

  5. Heat up the frying pan with coconut oil.

  6. Cook the pancake batter well. 

  7. Serve the pancake with the yogurt, maple syrup, and some blueberries.

Recipe Notes

Besides the almond milk, you can also use other non-dairy milk.
