- 1 cup All Purpose Flour
- 1/3 cup Milk
- 3/4 cup Granulated Sugar
- 1/3 cup Oil
- 1/4 cup Fresh Lemon Juice
- 1 tbsp Lemon Zest
- 1/4 cup Plain Yogurt
- 1/2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 1 tsp Vanilla Extract
- 1 cup Ground Almonds
- 1/4 cup Unsalted Butter
- 1 cup Icing Sugar
- 2 tsps Fresh Lemon Juice
- 1 tsp Lemon Zest
Preheat the oven to 350 F for about 10 minutes.
Prepare the muffin tray with paper liners.
Prepare a large mixing bowl.
Mix together the flour, baking powder, baking soda, and salt.
In another mixing bowl, mix the granulated sugar and oil. Whisk until you get a sand-like texture.
Add milk, yogurt, lemon zest, lemon juice, and vanilla extract. Beat them well.
Mix together the dry and wet ingredients mixture until you get a creamy texture.
Add the ground almonds to the cupcakes batter.
