Eggless Lemon Cupcakes
  • 1 cup All Purpose Flour
  • 1/3 cup Milk
  • 3/4 cup Granulated Sugar
  • 1/3 cup Oil
  • 1/4 cup Fresh Lemon Juice
  • 1 tbsp Lemon Zest
  • 1/4 cup Plain Yogurt
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 tsp Vanilla Extract
  • 1 cup Ground Almonds
Lemon Frosting
  • 1/4 cup Unsalted Butter
  • 1 cup Icing Sugar
  • 2 tsps Fresh Lemon Juice
  • 1 tsp Lemon Zest
Eggless Lemon Cupcakes
  1. Preheat the oven to 350 F for about 10 minutes.

  2. Prepare the muffin tray with paper liners.

  3. Prepare a large mixing bowl.

    Mix together the flour, baking powder, baking soda, and salt.

  4. In another mixing bowl, mix the granulated sugar and oil. Whisk until you get a sand-like texture.

  5. Add milk, yogurt, lemon zest, lemon juice, and vanilla extract. Beat them well.

  6. Mix together the dry and wet ingredients mixture until you get a creamy texture.

  7. Add the ground almonds to the cupcakes batter.

  8. Add the batter into the paper liners, and bake them for about 20 minutes, or check by inserting a toothpick into the center of the cupcakes. 

  9. Let the cupcakes totally cool down.

Lemon Frosting
  1. Prepare a mixing bowl, beat the butter and icing sugar you get a smooth and fluffy texture.

  2. Add the lemon zest and lemon juice, and beat again till you get a good frosting consistency.

  3. Decorate the cupcakes with the frosting.
