Ingredients
Dry Ingredients
  • 1 1/2 cups All Purpose Flour
  • 3/4 cup Cocoa Powder
  • 3/4 tsp Baking Soda
  • 1 tsp Baking Powder
  • 3/4 tsp Salt
Wet Ingredients
  • 1 Medium Avocado
  • 3/4 cup Almond Milk or Other Non Dairy Milk
  • 1 cup Maple Syrup
  • 1/3 cup Coconut Oil
  • 2 tsps Vanilla Extract
Instructions
  1. Preheat the oven to 350 degrees F for 15 minutes.

  2. In a large mixing bowl, sift all dry ingredients together, and mix them up. 

  3. Make the avocado puree in a blender or food processor.

    Peel the avocado, and cut into dices. Mix together the diced avocado, almond milk, vanilla extract, coconut oil, and maple syrup. You have to mix them until there are no any lumps in the puree.

  4. Mix together the dry ingredients mixture ith the avocado puree, and don't let them overmixed. 

  5. Put the cupcake batter into the paper liners, bake them for about 25 minutes.

  6. After about 25 minutes, check the cupcake by inserting a toothpick into its center, if it comes out clean meaning that the cupcakes are well baked.

  7. Let the cupcakes cool, and you can add some frosting if you want.

 

This eggless chocolate avocado cupcake is a perfect menu if you are on a vegan diet. You can serve it as a snack without feeling worried of getting too much fat as if you add eggs in the conventional cupcakes recipe.
