Ingredients
Dry Ingredients
  • 2 cups All Purpose Flour
  • 3/4 cup Sugar
  • 1 1/4 tsps Baking Powder
  • 3/4 tsp Baking Soda
  • 1/4 tsp Salt
Wet Ingredients
  • 1 cup Buttermilk
  • 1/2 cup Melted Butter
  • 1/2 cup Pureed Tofu
  • 2 tsps Vanilla Extract
  • 1/2 tsp Apple Cider Vinegar
  • 2-4 tbsps Water
  • 1/2 tsp Red Food Coloring
Instructions
  1. Preheat the oven to 350F. Put the paper liners on the muffin tin.

  2. Prepare a large mixing bowl. Sieve and mix together the flour, baking soda, baking powder, and salt, 

  3. In a different mixing bowl, whisk together buttermilk, sugar, butter, tofu, vanilla extract, add vinegar with a hand mixer. 

  4. Mix the wet ingredient and wet ingredient mixture well by using a spatula. Add water occasionally if the cupcake batter looks too thick. 

  5. Add the food coloring due, mix with the batter until you get the desired color. 

  6. Put the cupcake batter into the paper liners.

  7. Bake the batter for about 14 to 16 minutes. You can check whether the cake has been baked well by inserting a toothpick into the cupcakes if it comes clean meaning that it's done.

  8. Cool down the cupcake completely, and you can decorate it with frosting or sprinkles.
